Easy Nachos

You could probably find some decent nachos at a Mexican restaurant like Rancho Grande or On the Border, but why drive out to one of those places when you can make the same delicious dish at home?

Nachos are a great thing to make when you’re home alone because they’re really easy and you can add whatever you want to make them your own, but they’re also great if you want to do your family a favor and make them dinner one night.

Here’s what you’ll need:

Easy Cheesy

 

1 16oz can of chili

1 16oz can of refried beans1 16oz jar of salsa

1 large bag of corn chips

2 15oz bags of taco blend or Mexican blend grated cheese

You may already have a lot of these ingredients in your kitchen but if you don’t you can find them anywhere and they’re relatively inexpensive.

The first thing you need to do is find a container with tall sides, like a bread pan or a cake pan. I usually use a glass 4×10 cake pan, but really anything made of glass with tall sides will do. If you don’t have glass you can use plastic, but be careful as it could get warped in the microwave.

Fill the bottom of the pan with chips about ¼ of an inch high and then add a ¼ inch layer of cheese on top. Then add a 1/4 inch layer of each of the remaining ingredients with another layer of chips and cheese between each layer until the container is filled to one inch below the top.

Cover the container with a paper towel to prevent it from splattering and put it in the microwave for 3 to 4 minutes or until the cheese is melted.

Let it cool for a minute or so and then enjoy, this recipe can feed about 3 people, and can easily be doubled to feed more.
