Perfect Pumpkin Muffins

 

 

Prep Time: 10 minutes

Cooking Time: 25 minutes

 

Makes about 30 muffins

 

Ingredients:

  • 3 cups all-purpose flour
  • 1 tablespoon & 2 teaspoons pumpkin pie spice
  • 2 teaspoons baking soda
  • 1 ½ teaspoons salt
  • 3 cups granulated sugar
  • 1 can (15 ounces) 100 % pure pumpkin (Libby’s)
  • 4 large eggs
  • ½ cup vegetable oil
  • ½ cup water or orange juice

 

Steps:

  1. Preheat your oven to 350℉
  2. Paper-line or grease your muffin pan
  3. Combine flour, pumpkin pie spice, baking soda, and salt in a large bowl
  4. Combine sugar, pumpkin, eggs, oil and juice in a large mixer bowl
  5. Beat until just blended
  6. Add flour mixture to pumpkin mixture; stir just until moistened
  7. Spoon batter into prepared muffin cups, filling ¾ full
  8. Bake for 25 to 30 minutes, or until wooden pick inserted in centers comes out clean
  9. Cool for 10 minutes
  10. Enjoy!
