Cheesecake in a Mug? Maybe not

I am always looking for an easy, homemade, non-chemical filled snack and most people have tried the microwavable 3-2-1 Cake (3 Tbs any cake mix, 2 Tbs water, 1 minute in the microwave) but when I make it, it’s always lumpy and not satisfactory. In an effort to replace this gross recipe, I scanned Pinterest and found something I was willing to try.

     Cheesecake in a mug. Who doesn’t like cheesecake? So here’s the recipe I tried.

Minute Microwave Cheesecake

  • 2 ounces cream cheese, softened
  • 2 tbsp sour cream
  • 1 egg
  • ½ tsp lemon juice
  • ¼ tsp vanilla
  • 2-4 tbsp sugar replacement (like Splenda)

Mix all ingredients thoroughly in a microwave-safe bowl (a small mug will work. The end product wasn’t that much). Cook on high heat for 90 seconds, stirring every 30 seconds incorporating all ingredients. Refrigerate until serving. Optional: Top with fresh fruit, whipped cream, crushed graham crackers, or nutmeal.

      I’m just going to start out by saying that this was pretty disgusting. In a separate article from the recipe, it said that the egg, when microwaved, could scramble. And it did. It was really chunky and kind of gross. If it wasn’t lumpy, it might have been good.

     Another tip that I probably should’ve done but didn’t, it says to refrigerate it but I didn’t have that kind of time.

     So overall, this recipe may have been a dud. There are a couple of things that I could’ve done but didn’t, but if you want a safe snack, stick to a healthy granola bar or a cheese stick.
