Going Bananas

Admit it, you just sang “b-a-n-a-n-a-s” from Hollaback Girl by Gwen Stefani in your head. It’s alright.. I did too.

Regardless of how I spell them, I have loved bananas since I was a little girl. Bananas, Banana Bread, Banana Pudding; you name it, I ate it. Obviously over the past few years I’ve been running out of banana recipe options. That was until I came across this one: Peanut Butter Chocolate Banana Bites. Yes, they are as delicious as they sound and easy to make too!

Another plus? Everything I needed for this recipe was already in my pantry:
One or Two Bananas
Peanut Butter
Chocolate Chips and
Milk

All I had to do was grab a cookie sheet, cover it with wax paper and chop up the bananas. The original recipe says to make the bananas a half inch thick, however I just eye-balled it. Depending on how many bites you want, you may choose to use one banana or more.

Next, lay out all the banana bites out on your cookie sheet and cover the tops with a little bit of peanut butter. In a small, microwave-safe bowl begin to combine your chocolate chips and milk. The original recipe called for only a 1/4 cup of milk and a 1/2 cup of chocolate chips. Once again, I just eye-balled it; you’ll know when you have enough. Just pop them into the microwave for about 15 to 20 seconds or until the chocolate chips have melted and it has all become liquid.

Simply dip your banana bites into the melted chocolate using a fork so that the under side can be covered as well. Replace the dipped banana bites onto the cookie sheet and place them into the freezer. Wait for about four hours until the banana bites are completely frozen to begin eating them. I made plenty of banana bites and saved the rest in a freezer-safe container!
